It’s that time of week again where we team up with TV food presenter and chef Heba Naeem for #925FoodBreak, offering our readers weekly exclusive healthy and quick recipes to prepare for work.
On this week’s menu, we give you a delicious feast of roasted lemony chicken with spicy coriander sauce. We can already feel our mouth’s watering!
Ingredients:
- 4 chicken breasts (or your choice) but must be with skin
Marination Ingredients:
- Zest of 1 big lemon
- Juice of 1 big lemon
- 1 tbsp fresh ginger, grated
- 2 tbsp dried thyme
- 2 garlic cloves, minced
- 1/4 cup olive oil
- Salt and pepper
Spicy Coriander Sauce Ingredients:
- 1 cup fresh coriander
- zest of 1 big lemon
- Juice of the big lemon
- 1 fresh red chili
- 2 garlic cloves
- 1/4 cup olive oil
- Salt and pepper to your taste
Instructions:
- Mix all marination ingredients together in a bowl, add the chicken, mix well and let it marinate for an hour on the counter top or simply let it marinate over night in the fridge, (Let it on the kitchen counter an hour before cooking)
- Pre-heat oven on 180 c
- Put the chicken in a baking sheet or a pan, and roast for 20-30 minutes till golden
- In a blender put all ingredients together and blend in pulses to make the sauce. Make sure not to blend in a tall juice blender
