A Weekend Crowd Favorite: Chicken Tacos with Avocado Dip

It’s that time of week again where we team up with TV food presenter and chef Heba Naeem for #925FoodBreak, offering our readers weekly exclusive healthy and quick recipes to prepare for work.

On this week’s menu, we give you a crowd favorite and just in time for the weekend: Tacos! Not just any type of Tacos but chicken tacos with a deliciously creamy avocado dip.

Chicken Tacos

Ingredients:

400 g chicken breast, thinly sliced

6-8 soft tortillas or shells

1 onion, sliced

2 colored bell peppers, sliced lengthwise

1 cup fresh mushrooms, sliced

2 garlic cloves, minced

1 tsp cumin

1 tsp paprika

1/4 tsp chili powder

Juice of 1 lemon

Salt and pepper

1 tomato slices (Optional)

Avocado Dip:

Ingredients:

1 ripe avocado

1 pack Yogurt (100 g)

3 tbsp fresh coriander

Juice of 1 lemon

Salt

2 dashes of green or red Tabasco (Optional)

Instructions:

For the Chicken Tacos

In a skillet put 2 tbsp olive oil, heat up then add the chicken in batches till the brown. Remove in a plate and place a side.

Using the same skillet, (you can add a little bit of olive oil if needed) sauté the onions followed by the mushrooms. Stir for a couple of minutes, then add the bell peppers. Add the spices and stir for another minute. Return the caramelized chicken to the mix and stir well followed by the lemon juice.

Fill the tortillas shells with the mixture if using or simply put 3 tbsp to the soft tortillas and roll.

For the Avocado Dip: 

In a blender add all ingredients and mix till smooth.
