7 am mornings make it hard to think of food.
Most people are too busy or anxious to even consider preparing breakfast before work.
They end up dragging themselves to work on an empty stomach, becoming hangry zombies that probably will scream at a colleague or crash face down on their key board.
Some of us don’t have the luxury of waking up a little early to prepare and enjoy breakfast. We compromise and say we’ll just have something delivered to our desk. This avoids the kitchen morning hassle, but does create a health hazard.
Most likely, what you will be ordering will not be the most nutritious meal. It probably won’t be as pocket friendly as making a few sandwiches yourself either.
The simplest, most filling, and easiest food to transport will probably be a wholesome sandwich.
We somehow have forgotten just how easy it is to slap on two or three ingredients between two loafs of bread.

- Balsamic Tuna Toasty
This will forever be my favorite sandwich!
I usually have this on days where I drag myself to the kitchen, half asleep, because it really does not take much effort to make.
Ingredients:
(one serving)
- 1/2 a can of tuna
- 1 tbsp balsamic vinegar
- your choice of 2 bread loafs
PRO TIPS:
—> for a lighter option, I buy tuna in water and brine not olive oil
—> gluten free bread is usually my go to option to avoid the dietary impacts of gluten
To make:
- empty out the water in the can
- transfer half the can of tuna into a bowl
- pour the tbsp of balsamic vinegar onto your tuna
- mix well
- spread your tangy tuna onto a loaf of toast
- place the other loaf of toast on top
- put your toasty in the sandwich toaster (I prefer the sandwich toasters that close up on your toasties)
This high protein toasty will give you the energy you need to confront that early morning meeting.
2. Cheesy Mozzarella Melt
A melt in your mouth sandwich is really something to look forward to! Especially when it is super healthy, filling, and easy to make!
Ingredients:
(one serving)
- 2 mozzarella cubes
- 1 tbsp balsamic vinegar
- 1 sliced tomato
- your choice of 2 bread loafs
PRO TIPS:
—> for a healthier option I use vegan cheese
—> vegan bread is optimal here, to complete the plant based meal!
To make:
- slice and place enough mozzarella on one toast (the amount of cheese here is to your liking but usually 2 cubes is perfect)
- lather your cheese with the tbsp of balsamic vinegar
- add on as many tomato slices as you want
- place the other loaf of toast on top
- microwave your sandwich until the cheese melts
Who can argue that this healthy, racy and cheesy toasty won’t make 9-5 bearable.
3. Zesty Salmon Avocado Sandwich
If you’re feeling a little fancy, this lemony salmon toasty is for you!
Even though the salmon might scare off us non-morning people, it really does not take much effort!
Ingredients:
(one serving)
- about 3 slices of smoked salmon
- 1/2 a lemon
- 1 sliced tomato
- 1 tbsp avocado
- your choice of 2 bread loafs
- salt & pepper
- paprika
PRO TIPS:
—>wholemeal or brown bread is always a healthier option than white, especially for those of us that will not bother with finding the healthiest gluten free options
To make:
- cut an avocado and scoop out one tbsp
- spread the avocado on one toast
- add on as many tomato slices as you want
- add the salmon on top
- squeeze half a lemon on your salmon
- sprinkle some salt & pepper + paprika
- throw on some fresh oregano (optional)
- place the other loaf of toast on top
- put your sandwich in the toaster oven until the bread crisps
Treat yourself when you know you have a full day that’ll need some pampering, with this easy but classy salmon sandwich!
TIPS FOR BUSY BEES:
- Double everything if you want two sandwiches!
- Wrap your toasty in some foil, place in a plastic box and enjoy whenever you can!
- Enjoy on your way to work or once you get there
- Make it the night before and toast while you pack your work bag
- Toast/microwave your sandwich at work
